Smooth Belgian Dark & Milk Chocolate Ice Cream

If you think the name a bit immodest blame our son. Upon tasting it he declared “Mummy, this is the best chocolate ever” – no need to brainstorm that name any further! He still loves telling his friends today he was responsible for the name. We had often found that chocolate ice cream was grainy, occasionally bitter and could leave a strange aftertaste. It never seemed to have the delicacy of an excellent milk chocolate bar.

So, when developing this recipe we introduced three different Belgian chocolates into one recipe, and we still hold true to this balance of both dark and milk chocolate pieces and a Dutch cacao powder. We dial down the double cream as the cacao solids take centre stage. So, when a customer occasionally comments on our immodesty, we refer them to our son!
