Sea Salt Ice Cream & Homemade Caramel
This flavour was an instant hit when we opened. Salt and sweet flavours combined are a delicious surprise. We immerse caramel into a custard base, folding through further caramel to provide texture and flavour. Balancing of this recipe is critical though as the salt tries to melt the ice cream. We make our own caramel so we can control the amount of salt we use – and what’s better than homemade – and use a hand harvested Fleur de Sel salt from France to gently enhance the caramel. The result is a flavour salty enough to provide that sweet and salty ‘flavour party’, but not so salty to give you palpitations! The judges at the Great Taste Awards loved the overall taste too and awarded us a star!
