Mint Choc “Chips” (GF/EF)
Peppermint and Fresh Mint Ice Cream, Dark Chocolate Shards
No one likes to eat toothpaste, and to us mint ice cream often seemed to taste more like that than a delightful fresh spring mint.To achieve this, we experimented with many different types of mint and different quantities. We settled on a 50/50 fresh mint to peppermint ratio in an eggless white base that allows the flavour to really come through. Chocolate is complementary and well balanced with mint, and we use a dark Belgian chocolate, “chipped” in stracciatella style. This is an Italian method of layering melted dark chocolate, which then shatters when it hits the cold ice cream. Despite its green leaf, mint imparts virtually no colour when used as an ingredient, so we add a tiny bit of natural spirulina to add a soft green hue.
