Raspberry and Seasonal Berry Ice Cream, Homemade Snickerdoodle Cookies

This was one of the most fun recipes to work on before we opened. We wanted another fruit driven ice cream on the menu, but for it to have texture beyond the fruit. We were a big fan of American snickerdoodle cookies from our travels in America, so we experimented with these. Snickerdoodles, which aren’t related to Snicker bars in any way, are delicious cinnamon sugar cookies. With a rounded blend of seasonal berries, we folded in the snickerdoodles and the tartness of the fruit worked gloriously against the sweetness of the cookie. This was our first Great Taste Award winner, so it holds a dear place in our hearts! Given the seasonality of the berries we use we normally rotate this flavour just through Spring and Summer.
