When you like your vanilla to have a bit more rock and roll, you can’t beat Vanilla Honeycomb. We had sampled Hokey Pokey in New Zealand many years ago, and the fabulous texture stayed with us. We were amazed to discover that it was in fact honeycomb ice cream and apparently originated from when Italian food vendors serving ice cream used to shout oh che poco - "oh how little". We combined the honeycomb into our vanilla recipe and layered in blossom honey with small pieces of honeycomb for a delightful hit of vanilla, but a with a lot more texture.
